Hii! How was your weekend?
Charlotte was as preppy as I’ve ever seen it with the Wells Fargo Championship taking the town by storm and Derby parties galore. One day I’d LOVE to go to the Kentucky Derby. Who wouldn’t want to dress up in a fun dress and a ridiculous hat and drink mint juleps all day? Oh yes, the horse race I bet is pretty amazing too.
It was sunny and warm in Charlotte with clear blue skies. My kind of weather! It was a fun weekend-full of delicious eats. Here are a few pictures:

Two amazing desserts from Ruth’s Chris- apple tart and pecan pie. I was partial to the pecan pie (pictured on the right) I finally got an awesome steak that I’d been craving for a while-petite filet au poivre. I think Ruth’s Chris steaks are outstanding and in my opinion better than Del Frisco’s!
On Sunday I went to a baby shower thrown by one of my best friend’s mothers for her daugter-in-law Cassie. Emily knows how to throw a party! She is the most creative and FUN person I have ever had the pleasure of knowing. Definitely take a peek at her art! Her friend Kerry is an amazing baker and catered all of the delicious treats. She is the one that turned me onto putting pecans in my Key Lime Pie crust! She made some gluten-free turtle brownies and peanut butter whoopie pies that made me want run away with them and live happily ever after.
OLE OLE, on to the best guacamole I’ve ever eaten.
I’ve never really explained to you my infatuation with olives. I mean, the title of my blog is meant to be a double entendre-I’m part Greek with somewhat olive-toned skin, but I am also one of the biggest olive fans on the planet. However, if there is one thing that I love as much as olives it’s got to be avocado.
When I eat avocado regularly, my skin looks smoother and more supple. I put it in smoothies for a boost of healthy fats, serve it atop omelettes, add it to salads, you name it, I eat it.
Since today is Cinco de Mayo (NOT to be confused with Mexico’s Independence Day which is celebrated September 16!!) I thought I’d share my go-to guacamole recipe with you. Guacamole is one of those things that is better to make yourself. I make this all the time for parties. It’s quick, fresh, and most importantly-incredible.
Ingredients: (Serves at least 4 normal people, 2 ravenous wolf people..ahem).
2 ripe avocados
1/2 minced red onion
2 cloves minced garlic
1/3 cup chunky salsa
1/2 seeded minced jalapeño
1-2 limes (juice)
1 tsp+ salt
Slice avocados in half lengthwise carefully and remove the pits. Scoop out the flesh with a spoon.
Mix in all the ingredients.
Use a fork to incorporate everything. I like to leave mine a little chunky!
I like to serve my guac with rice crackers, simply because I think they are better than chips. They are actually healthier than chips so it’s a win win. I found this box of rice thins in the international food section for $1.99. The same type of crackers sell in the cracker isle for like $4.
I whipped up a batch of this chicken using chicken thighs instead of chicken breast, served it atop a Mexican style salad and called it dinner!
Definitely had to put a scoop of guac on my salad.
Do you have any fun Cinco de Mayo plans tonight? I am actually getting a light peel and then making Derby Pie bars to take to work. Not exactly a margarita fiesta, but I prefer not to drink on Mondays anyway. I always like a fresh start to the week! Have fun and be safe, wherever you night may take you!

I’ve often said I need to go to AA – Avocado’s Anonymous! I love them to and agree that guacamole you make yourself is the best! Pecans in key lime pie? I’ll have to try that next!
The pecans go in the crust–I edited that to make it more clear! I love that-Avocados Anonymous-I am definitely a member!
